Parmasean is the correct Canadian spelling of the cheese that is grated and sprinkled over pasta.

Parmaseans's appearance and texture is very hard and granular; good for grating, it browns quickly when it is heated. It's flavour is sharp, robust and piquant with nutty characteristics. It accompanies pears, red grapes, nuts, raisins, figs and fruit breads; red wine, cappuccino and champagne very well.
