Serves 16.
2 8-inch pie crusts
2 pounds Brie cheese
12 egg yolks (or 6 eggs, if you must)
1/4 tsp saffron or 1/2 tsp turmeric
1/2 Tbsp brown sugar
3/4 tsp powdered ginger
Bake pie crusts for 10 minutes and allow to cool.
Remove the rind from the Brie and line the bottom of the pan with it.
Mix Brie and other ingredients using egg beater or blender. It helps if you're in a warm room.
Pour the mixture into the pastry shell.
Bake at 350 for 30-40 minutes, until the pie is set and brown on top.
