Start with:

8 oz red potatoes, cook them until they are tender
2 TBL each:
celery (dice it up small)
parsley
red onion
bacon cracklings (3 slices of diced bacon) (save the bacon fat)

1 tsp minced garlic
1/2 TBL minched shallots
3 OZ mayo
1 OZ bacon fat
1 TBL whole grain mustard
bourbon to taste
saltto taste
black pepper to taste
1/2 tsp celery seed
lemon to taste

Mix it all together and let sit for one hour to meld flavors.
