So I've had not much but the most basic ingredients for food in my house for a couple days, and I've been trying out random combinations to see what's tasty. I'll be posting the best of them here.
Exactly what it says on the tin. Scrambled eggs with a hearty helping of everyone's favorite starchy tuber mixed in. Deceptively simple and really really tasty.
Ingredients:
x small potatoes
2x eggs
salt, pepper to taste
butter
Steps:
Slice the potatoes as thin as you can. Think potato chips. When you're done, quarter them so you have very small, very thin pieces of potato.
Throw them in a frying pan with enough melted butter to coat the bottom of the pan thickly (I use about 1.5 tbsp) and fry on medium until all the potato slices go clear (not brown!) Remove from heat.
Make scrambled eggs to your liking. Add whatever you would normally add; I go for simple scrambled eggs with a bit of shredded cheddar cheese and a good deal of salt and pepper.
Add scrambled eggs to potatoes and stir often until the eggs are entirely cooked to your taste.
Serve with buttermilk biscuits or anything else you have lying around.
