The best augmented poutine is a smoked meat poutine. Found at ESD in Ottawa. The beautiful combination of french fries, gravy, cheese curds, and Montreal Smoked Meat. It is a near religious experience.

There's this fast-food chain in Quebec called Patio Vidal that offers an interesting twist on poutine: french fries, gravy, cheese curds, chicken fingers cut into smaller bits, bits of hotdog sausage, and the finale, a tasty blob of coleslaw on top.
