White, with long skinny stems and little button caps. It has a mild taste and a soft texture. Good in soup!

Yes, they are very good. You will usually find them in a small bundle, huddled together. Cut away the root portion at the bottom and clean them gently with a damp paper towel. Pull the bundle into smaller portions. Arrange them in a bowl, perhaps with some cubed silken tofu, and then ladle the soup over top. A simple Dashi will do. Please do not cook enoki by sautéeing them as they are too delicate.
