Zeaxanthin is an antioxidant carotenoid, one of two responsible for central vision and the retina's health. Scientists believe zeaxanthin filters harmful sunlight from the eye. Lower intake of this yellow carotenoid can lead to eye problems (such as macular degeneration and cataracts) later in life.
Foods that contain zeaxanthin include corn, collard greens, and yellow squash. But the most zeaxanthin-rich vegetable? Spinach! Don't you hate it when moms are right?
