Found dried in oriental markets, these noodles are the produce of the mung bean. They have many pseudonyms, like "bean thread" or "transparent noodles". These noodles need to be reconstituted in lukewarm water for 20 minutes before using in a dish. They substitute well for pasta, and are a main component of Vietnamese spring rolls.
