Pear Toetje

You will need

• 4 or 5 pears, peeled, cored and quartered
• 3 large eggs
• 120g/4oz plain flour
• 120g/4oz margarine or butter, melted
• a few drops of vanilla essence
• a pinch of salt
• 120g/4oz caster sugar

Method

Heat the oven to 180C/350F/Gas 4.
Lightly grease a round 22cm/9in ovenproof flan dish.
Beat the eggs and sugar together. Stir in the butter and then the flour, a little at a time, with the vanilla and the salt
Pour half of the mixture into the dish. Put in the pears, then the rest of the mixture.
Bake the flan for 45 minutes to an hour until it is puffy and golden brown.
