Bean Curd with Mushrooms

Ingredients

• A box of Japanese tofu or 4 pieces of Chinese bean curd
• Some medium size black mushrooms
• 1 tablspoon of salt
• 1 tablspoon of sugar
• Soy sauce
• A bit of stock
• 1 tablspoon of cornstarch mixed with 1 tablspoon of water
• Oil

1. Soak the mushrooms for an hour, dry, remove stems and cut them.
2. Add the salt and sugar to the mushrooms and mix.
3. Fry the mushrooms lightly in oil.
4. Fry the sliced bean curd in the same oil for a bit. Add the soy sauce, salt, mushrooms and stock, continue to stir fry.
5. Thicken slightly with the cornstarch mixture. Serve hot.
